Test Kitchen for Kupu Maui August Chocolate Popup Dinner
We love Kupu Maui, our monthly popup dinners. Our process is that we select a farm location for the dinner, or sometimes the farm has a way of selecting us. Our chef, farmer and host take a long walk on the farm. We forage food, see what’s fresh and what we can use. Each of us get inspired and share one word each…that’s how we come up with our 3 word inspiration for each dinner.
But it’s the test kitchen that is the most fun and highly creative process. It’s just 3 friends getting together and playing with food. Finding what works, what doesn’t work and sharing our food ideas. For our August Test Kitchen chef Jenna is off island and we miss her. So our inspirations are CHOCOLATE ~ LAUGHTER ~ JAZZ.
Here in this photo we were listening to jazz and making chocolate extract. It’s made with cacao powder and vodka. This chocolate extract will be used to make the salad dressing. We can’t wait to feed you!
As we go into our test kitchen, we test and tweak each menu item. Some menu items sound delicious on paper but don’t manage to translate to an successful dish. And occasionally while we are preparing one dish another dish emerges.
I feel food is the intersection between art, science, sometimes luck, weather, creativity and then experiment. So many possibilities.
To cook and share my kitchen with such talented chefs as Jenna and James is highest form of art.
Then to add my other friends Melanie Boudar and Greg & Susy Stille to join us as we explore food and feed friends & guests, it’s simply what I was born to do.
Is that a chocolate martini in the picture? Oh yummmm, I can’t wait
Good eye Kim! It’s actually not a martini. But a hot chocolate drink served in a martini glass. We have some AMAZING chocolate food to share with you…and it’s not all sweet. Some items are rich, spicy, hot, cold, plate licking and we have one surprise that will leave you all smiling and laughing. We can’t wait to feed you! Kupu Maui Team
