<h2><span style="text-decoration: underline;">Pineapple Gazpacho</span></h2>
<ul>
<li>1 large Maui Gold Pineapple ~ wash, peel, cored and cube it into 1&#8243; pieces</li>
<li>2 large Maui Grown Cucumbers ~ wash, peel, seed and cut into 1&#8243; pieces</li>
<li>1 large Maui Onion ~ wash, peel and cut into 1&#8243; pieces. Then saute in 1 teaspoon canola oil. Cool. Season with salt and white pepper.</li>
<li>3 tablespoons champagne vinegar</li>
<li>1/2 cup fine panko</li>
<li>3/4 cup Ocean Vodka (or cold water)</li>
<li>Salt and white pepper.</li>
</ul>
<p>1.  Put everything into a Vitamix and blend to the desired texture.</p>
<p>2.  Serve in a chilled bowl.</p>
<p>3.  Top with a drizzle of mint oil or chopped mint.</p>
<h2><span style="text-decoration: underline;">Maui MINT OIL</span></h2>
<p>Remove mint leaves from stems, you&#8217;ll need about 1 cup. Blanch mint leaves in boiling salted water for 30 seconds to retain color. Immediately place in ice bath. Squeeze dry. Now squeeze it again. Add mint to Vitamix and drizzle 1/3 cup canola oil. Blend until smooth. Add salt. Serve mint oil drizzled on top of gazpacho. You can use basil, cilantro or be creative and try red bell pepper.</p>

<h3>Preparing Ulu</h3>
<ul>
<li>1 ulu</li>
<li>5 chili peppers</li>
<li>2 tsp Hawaiian salt</li>
</ul>
<p>Halve and then quarter ulu. Slice off skin with a peeler. Cut out seeded center. Bring a large pot of water to a boil. Add ulu, 2 tsp. Hawaiian salt, and 5 Hawaiian chili peppers (whole or seeded). Cook until the ulu can be pierced easily with a teriyaki stick—but with some resistance. Remove, drain water, and add cold water and ice to chill ulu quickly. Place cooled ulu in a colander and refrigerate 2-3 hours.</p>
<h3>Preparing Dressing</h3>
<p>Mix together the following ingredients in a bowl:</p>
<ul>
<li>3 tsp garlic, chopped very fine</li>
<li>2 tbs extra virgin olive oil</li>
<li>1 small Kula onion, diced fine</li>
<li>10 garlic chives (leaves only) sliced fine 1/3 cup apple cider vinegar</li>
<li>1/4 cup fresh Meyer lemon juice</li>
<li>1 tbs lemon zest</li>
<li>2 tsp Hawaiian salt</li>
<li>1 tsp freshly ground black peppercorns</li>
<li>3 tsp raw sugar</li>
</ul>
<h3>Reserve to add last:</h3>
<ul>
<li>1/2 cup fresh Italian basil leaves (ripped)</li>
<li>1 tbs. fresh oregano leaves</li>
<li>3 cups grape tomatoes (halved)</li>
</ul>
<h3>Procedure:</h3>
<p>Remove chilled ulu, make 1/2 inch slices, and cut slices into small pieces, about 1/2 inch square. Add mixture and toss well to blend flavors. Allow to marinate at room temperature (at least one hour). Just before serving, add fresh basil, oregano leaves, and halved grape tomatoes. Toss lightly. Serve room temperature.</p>
<h3>Recipe Variations:</h3>
<p>1) add diced pimento;</p>
<p>2) substitute red cherry tomatoes;</p>
<p>3) add capers;</p>
<p>4) just before serving, add fresh cubed oranges, marinated in extra virgin olive oil and ground black peppercorns; also add kalamata olives (make sure not to use tomatoes with this variation);</p>
<p>5) chili peppers (whole, diced, seeded—as preferred).</p>
<p><strong>Ulu (breadfruit)</strong> is a complex carbohydrate that is low in saturated fat, cholesterol and sodium and very high in vitamin C, dietary fiber and potassium. The nutritional value of breadfruit helps maintain optimum health. A large amount of nutrients and useful calories can be obtained by eating breadfruit.</p>
<p>Other than the contents given in the table below, the fruit also consists of 70.9 g of water content and 1.2 g of protein content. Breadfruit is very rich in healthy omega fats—namely omega-3 &amp; 6—which increase the body’s power. These vital fatty acids help the normal development of body and mind. Fatty acids also increase skin color, hair growth, regulation of metabolism, promotion of reproduction, and stimulate bone health.</p>

<p>This last August Kupu Maui event took place at the amazing Bailey House Museum in Wailuku.  Steeped in Maui history, we gathered on land that was once a farm and on the compound of Kahekili II, last ruling chief of Maui. It was a magical evening filled with Chocolate Smiles and Candlelight Laughter. Delicious food, coffee, chocolate and music made the night especially warm and friendly.  Proceeds from this evening went to the Bailey House Museum to ensure its continuance in the preservation and education of Maui culture.</p>
<p>A big Mahalo to <a href="http://www.accidentalconsultant.com/" target="_blank">Erik Blair</a> for creating such a lovely video for us in order to capture the memory and share with all of you.  If you were not able to join us for this evening, please stay tuned for our next.  We would love to sit down and have dinner with you.</p>

<p>We love Kupu Maui, our monthly popup dinners. Our process is that we select a farm location for the dinner, or sometimes the farm has a way of selecting us. Our chef, farmer and host take a long walk on the farm. We forage food, see what&#8217;s fresh and what we can use. Each of us get inspired and share one word each&#8230;that&#8217;s how we come up with our 3 word inspiration for each dinner.</p>
<p>But it&#8217;s the test kitchen that is the most fun and highly creative process. It&#8217;s just 3 friends getting together and playing with food. Finding what works, what doesn&#8217;t work and sharing our food ideas. For our August Test Kitchen chef Jenna is off island and we miss her. So our inspirations are CHOCOLATE ~ LAUGHTER ~ JAZZ.</p>

Here in this photo we were listening to jazz and making chocolate extract. It&#8217;s made with cacao powder and vodka. This chocolate extract will be used to make the salad dressing. We can&#8217;t wait to feed you!</p>
